White Garlic Pizza Sauce

White Garlic Pizza Sauce

Obsessed with this sauce. Officially. Of course I’m obsessed because it combines roasted garlic with a creamy, parmesan-loaded mixture of butter and milk, and it goes on pizza. What’s not to love? I’ve gone on record before about my affinity for all things roasted garlic: noodles, pizza dough, butter, etc. This shirt pretty much says it all for me, except insert the word “roasted”. This is just one more excellent use for all that sweet, golden goodness. If you’ve never had roasted garlic before, you might think an entire head of it sounds like too much for one batch of pizza sauce. But you would be wrong! Roasting garlic transforms the harsh bite of raw garlic into something smooth and subtle, all in just about 45 minutes in a hot oven. It’s magic.

Once you’ve roasted your head of garlic, let it cool a bit and squeeze the oozy cloves into a quick mixture of butter, flour, and milk to make this amazing white pizza sauce. Fold in some salty parmesan cheese and season the whole shebang with nutmeg, salt, and pepper. You’re well on your way to white pizza heaven. When I looked back at my notes on this recipe, I was shocked to see I hadn’t added any crushed red pepper to the mix – that would be an excellent idea if you’re in the mood for some spice.

Where can this white garlic pizza sauce call home? Right here, on this Garlicky White Pizza with Mushrooms and Kale. I imagine white garlic pizza sauce can take the place of tomato-based pizza sauce in many instances. It goes particularly well on this pie, though, because of all the roasty veg and the balsamic drizzle. Yes, yes, and yes. Dig in, guys!
