Obsessed with this sauce. Officially. Of course I’m obsessed because it combines roasted garlic with a creamy, parmesan-loaded mixture of butter and milk, and it goes on pizza. What’s not to love? I’ve gone on record before about my affinity for all things roasted garlic: noodles, pizza dough, butter, etc. This shirt pretty much says it all for me, except insert the word “roasted”. This is just one more excellent use for all that sweet, golden goodness. If you’ve never had roasted garlic before, you might think an entire head of it sounds like too much for one batch of pizza sauce. But you would be wrong! Roasting garlic transforms the harsh bite of raw garlic into something smooth and subtle, all in just about 45 minutes in a hot oven. It’s magic.

Once you’ve roasted your head of garlic, let it cool a bit and squeeze the oozy cloves into a quick mixture of butter, flour, and milk to make this amazing white pizza sauce. Fold in some salty parmesan cheese and season the whole shebang with nutmeg, salt, and pepper. You’re well on your way to white pizza heaven. When I looked back at my notes on this recipe, I was shocked to see I hadn’t added any crushed red pepper to the mix – that would be an excellent idea if you’re in the mood for some spice.

White Garlic Pizza Sauce

This white pizza sauce packs tons of flavor from a whole head of roasted garlic and lots of salty parmesan. Smooth, creamy, and completely dreamy!

  • 1 small head of Roasted Garlic
  • 2 TBS unsalted butter
  • 2 TBS all purpose flour
  • 1/4 C whole milk
  • 1/4 grated Parmesan
  • 1/8 tsp freshly grated nutmeg
  • salt and pepper


  1. In a small saucepan over medium heat, melt the butter, then whisk in the flour. Cook, stirring, for a few minutes until the butter/flour mixture turns light brown.
  2. Whisk in the milk and cook for another minute or two until the mixture has thickened.
  3. Squeeze the cloves from the head of roasted garlic into the mixture, add the nutmeg, and stir. Turn off the heat stir in the Parmesan. Taste and season with salt and pepper.
