‘Tis the season for party food! Let’s be real, New Year’s Eve is a long night. Midnight? That is more than a couple hours past my bedtime… We need a lot of food to keep that party going! I am so ready to ring in 2019 with friends, family, a glass of champagne in one hand, and a meatball in the other. These Easy Meatballs with Chimichurri Sauce are a snap to make and that bright, herby sauce paired with juicy, roasted meatballs might just be the best bite of food ever.Continue reading “Easy Meatballs with Chimichurri Sauce”
Here we are, a couple days before Christmas, almost time to slow down, crush some pillows, and generally chill out. This past week has been packed with doing, buying, wrapping, etc. and we need to sneak some coziness in today before we can fully relax tomorrow. Chipotle Sweet Potato Peanut Soup is just right- smoky, rich, and creamy but also super healthy. Sweet potatoes are true vitamin bombs and their sweet, earthy flavor combines perfectly with peanuts and chipotle.Continue reading “Chipotle Sweet Potato Peanut Soup”
Here’s a fun way to turn a healthy thing into an unhealthy thing:) Broccoli Feta Fritters! I love a fritter – sweet, savory, cheesy, any kind of fritter – I’ll take it. Are you thinking, “Frying at home: No thanks.”? I promise, this isn’t difficult or too messy. You only need a 1/4″ of oil in the pan, we’re not deep frying anything here. Clean-up will be no big deal. And really, you won’t be thinking about it anyway because you’ll be digging into these crispy outside, tender inside, veggie-loaded fritters. Crunch into the big chunks of broccoli and feta, surrounded by a wafer-thin fried batter, with a little savory bite of onion here and there… so good. Dip them into a little horseradish mayo while you’re at it.Continue reading “Broccoli Feta Fritters”
Grains, meat, veggies, beans, and whatever doodads you want to top it off with. These Burrito Bowls are easy, fast, and so satisfying in two specific ways – crazy comfort food coziness and you get to clean out your fridge. I have a real, strong emotional response to these bowls. The colors scream “Good for you!” and I give myself a free pass to eat huge (like, huuuuge) portions because the ingredients are all truly healthy.Continue reading “No Recipe Rainbow Burrito Bowl”
It’s November! And it’s finally crisp and chilly on the Outer Banks! Time for soup, ya’ll! I had a beautiful inspiration for this recipe today:
It’s 3pm on a Friday, which is a day off for me. We’re having leftovers tonight (determined by the sushi we brought home in a to-go container from the amazing Single Fin restaurant in Nags Head). Normally, I don’t love a day when I know we’re eating straight up leftovers and not leftovers that I’m turning into a brand new dish. I guess I just miss the opportunity to cook a meal? Today, leftovers are fine because I’m still cooking: Perfect Pot Roast intended for Joey’s lunch sandwiches. Continue reading “Perfect Pot Roast for Sandwiches”
It’s summer and it’s hot out but sometimes you just need a bowl of pasta with a rich and meaty sauce. That time is today! I forgot to include the garlic bread and salad in this picture but you get – big, fat Italian meal= happy. Speaking of this picture – does it not look way more pro than my usual pics? That’s because our friend Tony Politi shot this with a real fancy pants camera. Oh, and he also has camera knowledge and skills… Sigh. Still working on that part over here.
Back to food. I should clarify, this Beef Bolognese recipe is more than just a rich and meaty sauce. Continue reading “Beef Bolognese”
Chicken salad is one of those classics that it’s ok to mess with.
My 98 year old grandmother, Mamaw, lives with my mom and dad, right down the street from Joey and me. We’re lucky to have family so close and I still don’t spend as much time with Mamaw as I should. My mom does all the hard work of taking care of the house, cooking for my dad and Mamaw, and she works at our our spice shop in Duck.
Last night, I roasted a bunch of bone-in, skin-on chicken breasts to use for Joey’s sandwich fillings (I recently decided we could do better than processed turkey every day). While I was at it, I made some chicken salad to share with Mamaw and maybe lighten my mom’s load just a teeny tiny bit. Continue reading “Chicken Salad”
Sometimes, you get a cantaloupe that is just so sweet and juicy, you want to use it as many ways as possible. My current fave is a sweet and savory salsa. Guess what tastes amazing? Salting your melons! Cucumber and cantaloupe become a cooler, more chic version of themselves with a little bit of chile lime sea salt. Continue reading “Cucumber Melon Salsa”
OK, it’s my first taco post. I can’t believe it took 4 posts to get here. We eat tacos at least once a week. And then if Joey and I go out to lunch together on a day off, we usually get tacos. We ♥ tacos and they ♥ us. Continue reading “Chicken Tacos with Cucumber Melon Salsa”
