Roasted Vegetables

Fact: crispy, brown edges on a vegetable are better than mushy/steamed or bland/raw vegetables. Isn’t it nice to know there’s an easy way to achieve the crispy-browns every time, no matter what veggie you’re making? This is the way I do it all the time, every time. Leave a comment if you can possibly find a roast-able veggie this method won’t work for, (I mean, don’t comment “lettuce” or “avocado”…); I just don’t think you’ll find one.

Sausage, Kale, and White Bean Soup

Well, heeeyyyy 2019! I’m so glad we were able to celebrate the holidays with friends and family over the past few weeks. But, I’m also very happy to welcome the new year and get back into normal habits. Cookies with every meal? Not normal. Meatballs as snacks between meals? Delicious but not ok. It’s time to Get. It. Together. Time to make some Sausage, Kale, and White Bean Soup. This recipe is, in my opinion, like, 90% healthy. If you want to be squeaky clean and leave out the sausage and cream, it’s fine -the soup is still amazing. For me, I still require a little fat and richness. Not to mention, Joey’s “there’s no meat in this” sensor would go off.

‘Tis the season for party food! Let’s be real, New Year’s Eve is a long night. Midnight? That is more than a couple hours past my bedtime… We need a lot of food to keep that party going! Chipotle Sweet Potato Peanut Soup

Here we are, a couple days before Christmas, almost time to slow down, crush some pillows, and generally chill out. This past week has been packed with doing, buying, wrapping, etc. and we need to sneak some coziness in today before we can fully relax tomorrow. Chipotle Sweet Potato Peanut Soup is just right- smoky, rich, and creamy but also super healthy. Sweet potatoes are true vitamin bombs and their sweet, earthy flavor combines perfectly with peanuts and chipotle.

Broccoli Feta Fritters

Here’s a fun way to turn a healthy thing into a semi-unhealthy thing: Broccoli Feta Fritters! In all honesty, I freakin’ love a fritter. Sweet, savory, cheesy… any kind of fritter – I’ll take it. Are you thinking, “Frying at home? No thanks,”? Well, I promise, this isn’t difficult or too messy. You only need a 1/4″ of oil in the pan – so, yeah, we’re not deep frying anything here. And once you crunch into the big chunks of broccoli and feta, surrounded by a wafer-thin fried batter, with a little savory bite of onion here and there… Wait, what were we talking about? Let’s just dip these fritters into a little horseradish mayo and call it day, shall we? Broccoli Feta Fritters and horsey sauce are all really you need in life anyway.

No Recipe Rainbow Burrito Bowl

Grains, meat, veggies, beans, and whatever doodads you want to top it off with. These Burrito Bowls are easy, fast, and so satisfying in two specific ways – crazy comfort food coziness and you get to clean out your fridge. I have a real, strong emotional response to these bowls. The colors scream “Good for you!” and I give myself a free pass to eat huge (like, huuuuge) portions because the ingredients are all truly healthy.

Beef Bolognese

It’s summer and it’s hot out but sometimes you just need a bowl of pasta with a rich and meaty sauce. That time is today! I forgot to include the garlic bread and salad in this picture but you get – big, fat Italian meal= happy. Speaking of this picture – does it not look way more pro than my usual pics? That’s because our friend Tony Politi shot this with a real fancy pants camera. Oh, and he also has camera knowledge and skills… Sigh. Still working on that part over here.
